This soup is quite expensive to make, mainly due to the Fontina cheese which is difficult to find at a good price. The calorie content is quite high as well, but that is to be expected from cheese soup.

If you don't have any Marsala wine on hand - try substituting it with Sweet Vermouth instead. This recipe calls for such a small amount anyway that it's unlikely you'll notice the difference.

1 teaspoon Marsala wine
1 teaspoon Worcestershire sauce
1/2 teaspoon hot sauce
1/2 teaspoon white pepper
