This dish is relatively expensive to make due to the content of Champagne, pancetta and asparagus. Don't open a bottle of champagne just to make this dish - however if you have some leftovers, then this dish might be a good idea. Other options would be white wine - maybe with a small amount of champagne vinegar, and a small amount of bacon instead of the pancetta.
