 | | Mushrooms, Shiitake Shiitake mushrooms are large, black-brown with a earthy rich flavor for cooking in stir fries and soups. Discard the stems as they are tough but can be used for flavoring. The dried shiitakes are more intense in flavor for cooking. Serving size is about 1/2 cup cooked or raw about the size of a small apple.
