This recipe is both very expensive as well as high in calories. A large number of ingredients such as chicken, mushrooms, a large amount of butter and pancetta brings up the cost. To reduce to cost slightly, replace the pancetta with a small amount of bacon (and perhaps reduce some of the butter).  The high calorie content is partly due to the butter content - a total amount of 34 tablespoons! That's more than 4 sticks. This is indeed a very rich dish...

1 pound (4 sticks) butter
Salt and freshly ground black pepper
Chopped parsley leaves, for garnish
