Good cheese is expensive, as can be observed by this recipe. For really nice fondue, good cheese is imperative, so eventhough you could replace the cheese with cheaper options, the flavor wouldn't be quite the same.

Other good melting cheeses include fontina, mozarella, harvarti, gouda and swiss cheese.
