Homemade almond paste is a common ingredient in various pastries and candies. You can purchasealmond paste almond paste in some stores, however it can be difficult to find and it is very easy to make at home. Ideally, you need an old-fashion almond grinding machine, however a food processor works fine as well, even if you can't get as fine a grind. If you don't have a food processor but desperately need some almond paste, you can grate some by hand with a fine grater - although then watch your fingers.

You need to use blanched almonds, however if you don't feel like blanching almonds, you can purchase slivered almonds and use that instead. When you make almond paste, you only need a few ingredients on hand: almonds, powdered sugar, corn syrup and some light cream.

Store almond paste in the refrigerator.

Ingredients

170 grams almonds (about 6 ounces)

2 tablespoons powdered sugar

4 tablespoons light corn syrup

2 tablespoons half and half

Method

Grind dried, blanched almond, with the skins removed in a blender or food processor
until fine.

Add the corn syrup, powdered sugar and light cream, mix with a fork or spoon until well integrated.
