Peaches with Cream and Brown Sugar

I wanted to make a lovey but easy dessert that didn't require too many ingredients using fresh fruit. So this is inspired by the food network magazine using peaches but strawberries or blueberries would work well too and maybe mascapone. The flavor of the peaches certainly is enhanced by the brown sugar and what could be better than whipped cream and a hint of bourbon in the background. This light and elegant peaches and cream dessert certainly exceeded expectations for about 6 servings.

Ingredients

  • 3 peaches
  • 1 - 2 tablespoons brown sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup heavy cream
  • 4 teapsoons brown sugar
  • 4 teaspoons bourbon
  • pecans for topping

 

Method

Thinly slice about 3 peaches in a pie dish and cover with the brown sugar and vanilla extract. My peaches were a little firm so I let them sit about 45 minutes. Beat the cream until firm adding the brown sugar and bourbon. Layer in a pretty bowl and top with toasted pecans and a peach.
