Matignon is considered an edible mirepoix since it is served along side a finished dish. Include any herbs and spices as needed to suit your dish.

  • 4 ounces Onions, small dice
  • 4 ounces Carrots, small dice
  • 4 ounces Celery small dice
  • 2 ounces Mushroom, small dice
  • 2 ounces Bacon or ham, minced
  • Unsalted Butter as needed
