Cauliflower Mashed Potatoes

This is a great dish to try if you are looking for an alternative to regular mashed potatoes. The Cauliflower adds a different texture as well as a light flavor. To keep a somewhat similar consistency we do add a few small potatoes.

Also, if you are concerned with extra carbs this dish is much lower in carbohydrates then traditional mashed potatoes.

Method

Cut up one head of Cauliflower into 1 - 1 1/2 inch pieces and around 3 - 4 small potatoes, add to a 3 - 4 quart sauce pot.

Add salt and pepper to taste (1 teaspoon each).

Add 1 cup heavy cream and 1 - 1 1/2 cups milk.

Bring the pot to a simmer on medium heat. Make sure you watch the pot carefully, milk and cream can bubble over if the heat is too high.

Turn down to low for about 20 minutes and cover (keep an eye on the pot though). Then mash up with a standard potato masher. Serve.

This can be turned into many types of meals. Lemon Pepper. Curry powder. Chipotle peppers. You can really work with this for any style cooking.
