Sauteed Pearl Onions

Pearl Onions are a perfect match for filet mignon or any good quality steak. We had them with filet mignon recently and sauteed them in butter until they were caramelized slightly and then served them with the meat.

Method

Cut the ends off each side of the onion and then peel the outer paper off. This takes a few minutes but it is worth it.

In a 10 or 12 inch sautee pan on medium high heat add about 1 tablespoon of butter and add the onions. Add about 1 teaspoon of salt, we used kosher. Roll them around the pan so they get evenly heated and then lower the heat and leave them for about 10 - 20 minutes.

Now you add them to a wine or cream sauce to pour over a steak or even a white fish.
