These ice cream cupcakes with strawberry flavor are certainly different and would be a neat surprise at any party or event – however a kids birthday party in particular would be the perfect occasion to serve these little treats! Of course the options are endless: utilizing this basic method of combining cake, ice cream and whipped cream in muffin tins, you can create ice cream cupcakes with flavors such as chocolate, banana, raisin rum, coffee etc... Simply choose the most appropriate cake (vanilla, chocolate etc...), then the most suitable flavoring (jam, chocolate syrup, caramel sauce, butterscotch etc...), and then of course the ice cream which would fit best. If you want to go even wilder, then you could always flavor the whipped cream as well with extract or chocolate to fit your idea of perfection.

Well, isn't this just the most fun idea ever? Use your imagination, create a fantastic creation and perhaps decorate them with sprinkles or chocolate shavings to complete the pictures. For even more fun: create a variety of different flavors for a party and line them all up! The possibilities are endless...

Strawberry Ice Cream Cupcakes

  • 1 store bought pound cake, sliced ½ inch thick
  • ¼ cup strawberry jam
  • 2 pints of strawberry icecream
  • 1 cup heavy cream, chilled
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract

Method:

Place cupcake liners in a 12 cup muffin tin. Cut 12 circles from the sliced pound cake with a 2 inch bisquit cutter. Spread 1 teaspoon jam over each circle, then place inside the cupcake liners. Put a generous ice cream scoup on top of each circle. Cover with plastic wrap and freeze for about 2 hours, or until firm.

Whip up cream, sugar and vanilla extract until soft peaks. Top each scoop of ice cream with whipped cream. Freeze uncovered until the cream has set, about 4 hours. If you plan to serve these cupcakes at a later time, then wrap the whole tray in plastic wrap tightly.
