Blonde Brownies are an interesting treat to have instead of the traditional chocolate brownie. The dough is very similar to chocolate chip cookie dough.

  • 1 cup sifted all-purpose flour, (4 ounces by weight)
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1/2 teaspoon salt

  • 1/3 cup butter, unsalted
  • 1 cup packed brown sugar

Update: October 7, 2011

We just tried this recipe again and it came out great. The only difference this time is that we used an 8 x 8 inch pan instead of a 9 x 9 inch pan. We found last time that if the batch were in a somewhat smaller pan it would be a little chewier - and it was. A great simple recipe.

Method

Preheat oven to 350 degrees F
Mix flour, baking powder, baking soda, and salt in a work bowl.
Add 1/2 cup chopped nuts. Mix well and set aside.
Melt 1/3 cup butter. Add 1 cup firmly packed brown sugar and mix well.
Add 1 beaten egg and vanilla. Blend well.
Add flour mixture, a little at a time.
Spread in 9 x 9 x 2 inch pan. Sprinkle chips on top.
Bake for 20 to 25 minutes.

Note: for a different experience we suggest doubling the batch, but using the same size pan for a thicker chewy brownie.
