By using three kinds of chocolate (bitter/semisweet, unsweetened and cocoa) these brownies become very rich and filled with chocolate flavor. These are moist, slightly chewy and they have a smooth texture. The perfect brownie!

Ingredients

5 oz bittersweet or semisweet chocolate, chopped
2 oz unsweetened chocolate, chopped
8 tablespoons (1 stick) butter, cut into cubes
3 tablespoons cocoa powder
1 ¼ cups sugar (8.75 oz)
3 eggs
½ teaspoon salt
2 teaspoons vanilla extract
1 cup all-purpose flour

Method:

Melt the chocolate
over a double boiler, add the butter and stir until smooth. Whisk in the cocoa, let cool slightly.

In a medium bowl, whisk together sugar, eggs, salt and vanilla until combined. Whisk the warm chocolate mixture into the egg mixture, stir in flour until just combined with a wooden spoon. Pour mixture into a 8 inch square baking pan (sprayed or covered with foil, then sprayed).

Bake in a 350 degree oven for about 35 to 40 min until an inserted toothpick comes out clean. Let cool, then remove the brownies from the pan, cut in small squares and serve.
