Description: 10 inch stainless steel skillet. Stay cool handle. Aluminum core.

Pros: Very nice skillet, the design is really nice with clean a finish. Perfect weight for its size.

Cons: None so far.

Conclusion:

This skillet seems to heat very evenly and in testing browned whatever you are sauteeing very evenly. It is a well made pan with a nice, sturdy handle. We have tested other calphalon products and tend to prefer All-Clad or Viking, but this pan has performed very well.

We actually like the fact that this pan is 10 inches, for this design it works well. 12 inches may be too large for many uses and creating dishes for up to four people does not really require such a large pan.

Note: In general stainless steel skillets work well when you do not treat them as if they should be non-stick pans. The whole point of a stainless steel surface and a clad design is that you will have even heating and are able to have some sticking. You want to create a browned surface on your food and non-stick does not do that too well.

For high-heat sauteeing of meat, make sure you do not move the food around too much, you want to have some sticking. Your food will release as it cooks and then you want some brown bits so you have something to de-glaze to create a sauce from.
