French Onion Soup is a classic dish with few ingredients, but what makes it special is the way the onions represent a completely different taste and texture then they typically have. If you are looking for a really great soup then it takes some time to properly caramelize the onions. We also start with a lot of onions. We figure 7 large yellow onions with only 5 cups of liquid for 4 servings gives a very strong onion flavor. We take about 2 hours to caramelize the onions, stirring every few minutes. This length of time allows for a very deep color and flavor. Method Place butter in a soup pot, or a dutch oven on medium heat and add the julienned onions and salt. After the onions have caramelized add the 5 cups of broth (or boullion cubes and water). Add the soup to an oven safe bowl, and then add some bread and a slice of cheese and place under the broiler for a few minutes.
