If you happen to have a piece of beef tenderloin tucked away without any ideas on what to make, then why don’t you try to make the best Philly cheese steak sandwich you ever had. That’s right, we’re going to use that nice piece of beef tenderloin for a sandwich. I realize some people might think it would be a waste to use such a fine piece of meat, chop it up and put it on a roll, but the cut’s tenderness is perfect for a juicy and mouth watering Philly cheese steak sandwich!

Ingredients:

  • 4 rolls
  • Olive oil
  • 1 pound of beef tenderloin, sliced very thinly
  • 1 onion, chopped
  • 1 batch of cheese sauce
  • salt and pepper.


Method:
Start with making the cheese sauce – you don’t really want to multitask just in case your sauce would break. Next, put a cast iron pan on high heat. Put some olive oil and salt and pepper on the meat and place the meat on the hot pan in batches. These pieces will cook really fast – account for maybe 30 seconds to a minute on each side. Remove from pan and cook the next batch, you don’t want to over crowd your pan. When all the meat is cooked, cover and let rest. Sauté the onion in olive oil with some salt until translucent.

Now, chop the cooked meat up in small pieces. Make sure your sauce is warm and assemble your sandwich: divide the onion and the meat on four rolls and spoon over some cheese sauce, possibly sprinkle with some fresh chives and add some freshly ground pepper. Serve immediately. Now this is a delicious sandwich!
