The cross wire design holds hot cookies or cakes better than single wire cooling racks. The biggest problem with this product is it is a little small. We would like it better if it completely filled a half sheet pan. But for frying or holding cookies it works pretty good. We use a larger single wire rack also and we like it better because it is bigger and heavier. This one is a little light so it moves around more easily when we would like it to be more stable.
