Brand & Type: R H Forschner 6-inch Boning Knife, Straight, Narrow, Flexible Blade, Black Fibrox Handle

Price range: $15 - $25 knife

Rating: Medium

Description: 6-inch Boning Knife with slip resistant handle made of black fibrox.

Pros: Comfortable handle design. Nice sharp blade out of the box.

Cons: Blade is stamped, that only matters if you want more weight or a thicker blade.

Conclusion: Most knife block sets do not come with a boning knife, of with one of low quality. This is a very good knife, and of course it comes with the America's Test Kitchen recommendation. We generally prefer heavier knives from Wusthof but this is a nice knife and it is much cheaper than the German or Japanese knives.

For those who use a chef's knife to trim a tenerloin or debone a chicken will benefit from the flexibility that a boning knife provides, exactly because the knife is narrow and the blade is flexible.
