Baked Lentils with Mushrooms & Feta

If you're looking for a different and delicious way to serve lentils, or if you're just on the hunt for a nice vegetarian meal, then this would be a good one to try. First you cook the lentils, onions and mushrooms, along with any other vegetables you have on hand (carrots, peppers etc...). Then you make a flavorful marinade, distribute everything in an oven proof dish, and put feta on top. After that, bake in the oven and serve with some salad and a good bread.

This is simple to make, a bit unusual and very delicious. It's also perfect to make if you're having a vegetarian dinner party since the dish will take care of itself in the oven and you can simply take it out when you're ready to eat.

Ingredients:

  • 2 cups lentils (brown or lentils de puy for example)
  • 2 onion, peeled and chopped
  • 3 carrots, peeled and chopped
  • some mushrooms, washed and sliced
  • 2 peppers, sliced
  • 1/3 cup soya sauce
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon Worcester sauce
  • 2 garlic cloves, minced
  • some ginger, grated
  • ½ teaspoon red peppers
  • 1 tablespoon honey
  • 1/3 cup oil
  • feta cheese
Method:
Cook the lentils in a pot of water until just soft (don't overcook them!). Meanwhile, sautee mushrooms, carrots, and mushrooms for about 10-15 minutes in some oil. In an appropriate baking dish, whisk together the sauce with soy, vinegar, Worcester, garlic, ginger, red peppers, honey and oil.

Once the lentils are cooked, add them to the baking dish along with the sauteed vegetables and the peppers. Stir everything well and then distribute cut up feta over the casserole. Bake in a 350 degree oven for about 20-30 minutes. Serve with a green salad and a nice bread.
