The Simple Fried Egg Sandwich

I think sometimes we forget some simple dishes that are ridiculously easy to make. Like a fried egg sandwich for example. Eggs and bread are cheap, and most people always have some on hand. It’s great when you don’t really know what to make and don’t really feel like cooking.

I happen to be very fond of fried egg sandwiches, especially if you season the egg well and break the yolk while cooking. I never turn my egg over in the pan since I like my yolk a little loose, I guess we all have our quirks in regards to how we like our eggs cooked…

Here is how I like to make my sandwich:

Put a piece of whole wheat bread in the toaster.

Place a sauté pan on medium heat and let it get warm. Add a little butter and let it melt. Crack your egg and place it in the hot pan. Break the yolk with knife. Liberally season the egg with salt, chili powder, oregano and lemon pepper.

Take the bread from the toaster, and slide the egg on the bread when it’s still a little wiggly on top. Sprinkle some cheese on top and put the sandwich under the broiler for about 30 seconds.

Serve immediately - either as compliment to a bowl of soup or a salad, or as a late night snack.
