Homemade scones are a perfect treat either for breakfast, afternoon tea or as a late night snack. Easy and quick toscones make, they don't take more than 20 minutes from beginning to end.
It's important that your dough isn't too dry, rather have it be a little too wet, in order to get moist scones. You want to cook this kind of dough on high heat for a short period of time.

Serve with some butter and jam,
or for a heartier meal put some cheese and ham on each side. Another favorite topping is lemon curd, pumpkin butter or apple butter. Anything sweet or creamy goes well on scones, why not serve yours with some English traditional clotted cream...

Serves 2-3 (1 large cake - 4 large pieces or 8 cut up pieces)

Ingredients:

  • 1 cup flour
  • 2 teaspoons of baking powder
  • 1/8 teaspoon of baking soda
  • 1/8 teaspoon of salt
  • 2 tablespoon of butter, chilled and cut in small cubes
  • ¼ cup + 1 tablespoon milk

Method:

Mix all the dry ingredients together in a work bowl. Add the butter and work quickly with your fingertips to incorporate it into the flour mix. Add the milk to the mix and fold the batter together quickly with a wooden spoon. Don’t over-work the dough.

Place the dough on a sheet pan, either covered with a silpat or parchment paper. Form the dough into a circle. Run a knife through it to make four “cakes” – if the dough is a little loose and won’t quite separate, that’s just fine. Poke each “square” with a fork about 3 times.

Bake in 425 degree oven for about 8-10 minutes. Serve with butter and jam.

Tip! If your dough is sticky, then put some oil on your knife before cutting it through, as well as on your fork. Then no dough will stick on your knife/fork and it will be easier to use.
