Blind Baking

To partially bake a crust for a pie, like a quiche or apple pie before adding the filling. Used to enable browning. Blind baking generally utilizes pie weights or beans to weigh down the crust so it does not rise up in the oven. The filling is then added and placed back in the oven to finish cooking.
