Roasted Prosciutto Wrapped Asparagus with Seasoned Bread Crumbs

  • Unsalted butter for baking dish
  • 1 large bunch asparagus about 1 1/2 lbs trimmed &
  • blanched for 4 minutes in boiling salted water
  • gray salt & fresh ground pepper
  • seasoned breadcrumbs--recipe follows
  • 8 thin slices prosciutto
  • 2 tbl olive oil


Preheat oven to 400 degrees. Butter a baking dish that's long enough to hold the asparagus. Season the asparagus with salt & pepper .

Divide the asparagus into 8 equal bundles. Arrange 2 slices of the prosciutto on a work surface so they slightly overlap. Place an asparagus bundle on top & roll carefully in the prosciutto. Arrange in the baking dish & sprinkle with 1/4 of the bread crumbs, drizzle with olive oil.

Roast in the oven about 10 minutes.

Seasoned Bread Crumbs

  • 1 1/2 teaspoons olive oil
  • 2 cloves minced garlic
  • 1/4 cup dried bread crumbs
  • salt
  • pepper
  • 1 tbl chopped parsley
  • 1 teaspoon grated lemon zest
  • 1 tbl grated parmesan

To make the seasoned bread crumbs,
heat the olive oil in a small skillet over medium heat.. Tilt the pan & add garlic. Add bread crumbs, cook stirring until crumbs are toasted. Pour into a small bowl & add the rest of the ingredients, toss.
