Pasta Salad

This kind of pasta salad is perfect to prepare on a lazy summer day (or any other time of year...) The recipe is quite flexible - just add whatever you happen to keep on hand. Some nice salami provides some good flavor as well olives and cheese. Be generous with the veggies - this kind of salad is best when there are more meats, cheeses and vegetables than pasta!

To go with this, create a flavorful vinaigrette. Our favorite is an olive oil and balsamic vinegar dressing with lots of garlic and fresh herbs.

Ingredients:

  • 1 pound pasta cooked & drained
  • 1/2 cup hard salami, cut into strips (about 3 ounces)
  • 1/4 cup provolone cheese, cut into strips
  • 1/4 cup grated Asiago or parmesean cheese
  • 2 tablespoons green olives, halved and pitted
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • broccoli & peppers (red or green) sliced thin
  • carrots sliced thin
  • diced tomatoes

Method:

Combine all the ingredients and toss with a dressing. Remember not to add warm pasta into the salad if you have cheese cubes in it, it will create half-melted cheese cubes...

Add some bread & it makes a complete meal especially on a warm evening.

Don't forget to have a nice glass of wine too.
