Quick and Easy Zucchini Bread

I made this zucchini bread as a side dish yesterday to the pork and vegetables I had planned for dinner. I used 4 large eggs and canola oil instead of vegetable oil (I thought it was healthier). I also used a 6 cheese shredded Italian mix from the supermarket and seasoned the bread with dried herbs (garlic & basil). Next time I'm going to add parmeasan on top for the last 5 minutes of cooking.

I did use our 8 x 8 silicon baking dish which I'm not too fond of, however it was fine since I sprayed it before using.

This bread turned out very nice. The recipe is simple and easy to make and very appreciated anytime.

Ingredients:

  • 2-3 medium zucchini--sliced thin
  • 1 cup bisquick
  • 4-5 eggs beaten
  • 1/2 cups grated cheese (cheddar or swiss)
  • 1/2 cup chopped onion 1
  • /3 cup vegetable oil
  • season with salt, pepper,basil,parsley,garlic
  • optional--salami,bacon,ham

Method:

Grease an 8 x 8 pan lightly. Mix all ingredients together and pour the batter in the pan.

Bake in a 375 degree F oven for about 40 minutes.
