The Best Chicken Curry Salad

This reipe is a combination of 2 other recipes & is the best

Ingredients:

  • 3-4 chicken breasts, bone in, skin on
  • olive oil
  • kosher salt
  • fresh ground pepper
  • 1/2 cup chpped celery
  • 1/4 cup chopped scallions--white & green
  • 1/4 cup raisins
  • 1/2 cup plus 2 tablespoons spicy brown mustard
  • 1/2 cup honey
  • 1 1/4 teaspoons curry powder
  • 3/4 teaspoons lemon powder
  • 1/8 teaspoom salt
  • butter for spreading
  • 1 loaf good bread
  • 1/2 cup shredded carrots
  • 1/2 cup slivered almonds
  • 2 medium tomatoes
  • 1 bag salad greens

Method:

Preheat oven to 350 degrees. Place chicken on a sheet pan & rub with oilve oil & salt & pepper, roast 35-40 minutes. Let cool & remove meat & shred chicken.

In a large bowl combine mustard, honey,curry powder,lemon pepper & salt add chicken. Cover &
refrigerate for at least 30 minutes.

Butter both sides of bread in a skillet over medium heat until browned. Combine all other ingredients with chicken mixture. Divide the chicken curry among the bread slices & top with tomatoes & greens. Serve with fruit
