Paula Deen's Red Pepper Scallops

This dish is relatively expensive to make due to the scallops. If nice-looking scallops are difficult to find, they could probably be replace with frozen shrimp instead, or some firm-fleshed white fish. Of course then, the recipe as a whole has been altered.
