Garam Masala is an aromatic all-purpose blend of dry-roasted ground spices used alone or in combination of other spices to achieve a balanced blend. Commercially prepared mixtures usally contain dried chile peppers, dried garlic, ginger powder, seasme, mustard seeds, tumeric, corriander, star anise and fennel.
Many variations exist but the garam masala is usually added at the end of the cooking process or sprinkled just before serving. Buy only what you need as it tends to loose its flavoring.
