We had a couple of extra bananas around and some leftover dark chocolate, so we decided to make a quick recipe from scratch.
Preheat oven to 350 degrees.
Smash up two bananas with 1/2 cup sugar, 1 teaspoon vanilla and 1/2 teaspoon kosher salt. In a seperate bowl add 1 cup of cake flour and 1 teaspoon of baking powder.
Gently melt 6 ounces of chocolate.
Add the banana mixture, 1 egg, 1/2 cup milk and melted chocolate to the flour. Fold all ingredients together and then pour into a 8 inch prepared pan.
Bake for 20 - 25 minutes.
Leave the cake in the pan for at least 10 minutes before you turn it out onto a cooling rack.
The result was pretty good. The recipe may work even better for muffins.
