Cabbage is a hearty plant that contains a lot of vitamin C. It is derived from a wild, leafy mustardcabbage plant, native to the Mediterranean. A cabbage plant is large and wide with many out-folding leaves. Only the inner part of the plant - the head is actually eaten, and usually the outer leaves of the head is removed as well.

Cabbage is used in a variety of dishes, such as salads, soups and stews. It can be sautéed, stuffed, and fermented. Common cabbage dishes includes Coleslaw, German sauerkraut and Korean kimchi.

Raw cabbage contains very high levels of vitamin C and also has a high contents of vitamin B6 and folate. Cabbage also contains anti-inflammatory properties and is used to treat inflammation in European folk medicine.
