Makes 4 sandwiches

eggsBoil the eggs in water for about 7 minutes. Shut the heat off, cover the pot and let sit for another 5 minutes. Rinse the eggs under cold water, let cool, then peel. Dice the eggs and mix all the ingredients together.

Divide the salad on 4 bread slices, top with lettuce and another slice of bread.
