I wanted to be creative and prepare an appetizer for our Easter Dinner that would be different as well as tasty. I decided that I would make Scallops with Artichokes as our appetizer. To the best of my knowledge there is no existing recipe, but perhaps there may be in some old book of recipes.
The ingredients are essentially readily available and not at all expensive.
One red Onion, Several cloves of garlic (to taste), One pound of diced artichokes, One pound of fresh scallops, Some extra virgin olive oil, some white wine, fresh oregano, salt and pepper.
Preparation: Chop One medium size red onion (for color), Chop six cloves of garlic (I love garlic), One pound fresh scallops & Some extra virgin olive oil. You will need two pans ideally. In the first pan cover the bottom with some extra virgin olive oil over medium heat. Do the same in the second pan. I also added some fresh ground pepper and fresh oregano to each pan.
Over medium heat combine the onion and garlic and sweat the onions for about 3 minutes. Then add the chopped artichokes with an extra drizzle of extra virgin olive oil. Simmer over medium heat for about 3-4 minutes.
In the second pan heat the extra virgin olive oil over medium heat and sear the scallops for about two minutes and then add some white wine. Also add some white wine to the first pan with the onion, garlic and artichokes.
Simmer for about three to four minutes to allow for reduction of the wine and then combine the scallops with the artichokes into one pan with the additional (excess) white wine that may still be with the scallops.
Do not hesitate to improvise, I did!
The comments from the dinner guests were all positive. I believe I can safely say this appetizer was a big hit with everyone. I will definitely make this dish again!

Name: Margaret Comment: What an interesting idea for a side dish. I will be hosting a family reunion and might try this although it will not be enough to feed my family, will need to have at least two pounds of scallops, expensive!

Probably the most important ingredient would be making certain the scallops are fresh and from a source you have lots of confidence in. A local fish monger or other source where you can be certain of the quality.
