As I have still been in the mood for IPAs so I grabbed Wolaver's IPA. I was surprised to learn this was from Vermont's own Otter Creek. For the environmentally and health conscious this IPA is also USDA certified organic. Wolaver's IPA poured amber with a gold tint. The well laced had did not have great retention. A thin layer of foam did remain on top. The aroma was not super hoppy. I could smell more of the sweet malts. This definitely did not have a floral, fruity or piney aroma I was expecting from an IPA. The beer tasted raw with a slightly bitter finish and I do mean slight. The hops opened up in the back of my throat giving the beer some depth to the flavor. This beer just did not have the bright, floral hops flavor I was expecting and wanted. I just found that the flavor was driven by the malts with a hint of sweet vanilla in the profile. The flavor of this beer was mellow and relaxed. I personally would not consider this an IPA. The body and the texture of the beer was smooth and silky. Forgetting about the style, I think this is a very nice beer. This is not hoppy or floral or bitter, but is a smooth subtle flavored amber ale. This is a nice beer if a bit pricey given they are charging a premium because it is organic. This is just not a good IPA and I would not get this again if I wanted an IPA. I grabbed this along with Thunderhead IPA and I was not happy with that as an IPA either. It just was a bad week for IPAs.
