There is definitely something to like about this pilsner from Mooresville, NC. I updated my notes on this beer after not being sure what I thought about it the first time I tried it. To me the flavor of this beer can be summed up as raw as the grains tasted raw with a slightly gritty texture of an unfiltered wheat. I could even taste raw yeast to a degree. As an American interpretations of a pilsner it captures the essence of the real deal such as Pilsner Urquell or Dinkel Acker - Cd-Pil. I found this to be a very drinkable beer and more to my liking than the European pilsners because of this beer's more robust character. Carolina Blond poured a crystal clear, straw gold with a very nice big bubble head. The retention was about average. The aroma was raw grain with some light banana notes like a wheat. This is a lighter, crisper beer but with some body. The flavor is of light grains with hints of lemon citrus in the background. The flavor of the yeast is fairly pronounced in this beer. I noted it in the aroma as banana but in the flavor it is bready. Also, there is not much in the way of hops in this drink. The carbonation was good and seemed to open up the raw grain nose of this beer. For a beer that looks light body, I found I could sink my teeth into it. To me this seemed to have more body and a richer earthier flavors than a traditional pils.
