Light and Tasty Egg Salad

I have had such a craving for egg salad lately and decided to make a big batch to have around and make sandwiches with. I like my egg salad to be creamy, but not too rich on mayo, and preferably well seasoned with dill or other spices. This egg salad turned out very good and a pinch of curry added that little extra something.

A large batch (I guess 8-10 servings):


  • 12 eggs
  • 4 tbsp of mayonnaise
  • 1 tbsp of Dijon mustard
  • 1 tbsp of spicy brown mustard
  • 2 stalks of celery, finely chopped
  • 3 large pickles, finely chopped
  • 1 1/2 tsp of dried dill
  • 1/2 tsp of salt
  • Freshly ground pepper
  • 1/3 tsp of curry


Place eggs in a large pot, fill with cold water and bring to a boil. Remove pot from heat, cover and let sit for 10 min. Remove eggs from water and let cool, peel and chop.

Mix mayo, mustard, celery, pickles and all spices in a large bowl. Add chopped eggs, mix well and season to taste.

Serve either on hard bread for an easy snack or in a sandwich with lettuce and red onion.
