Simple Fruit Dessert: Baked Cream Cheese Stuffed Apples

I, for one love fruit desserts. Often it feels like such a better way to go than some dense, heavy cake or ice cream. So the other day when I looked into the fridge and saw apples and cream cheese I remembered a dish we've been wanting to make for quite some time: smoked apples stuffed with brown sugar and cinnamon flavored cream cheese. This dish was featured on some cooking show a while back and the guy was smoking these babies in his smoker.

Well, smoking stuffed apples sound beyond amazing, but since we don't exactly have a smoker standing by, the oven just had to make do.

And let me say, it worked out just fine. After coring the apples and stuffing them with cream cheese mixed with some brown sugar and cinnamon, into the oven they went at 350 for about 50 minutes. Out came warm, oozing apples which went so very well with some whipped cream.

This is actually a rather hefty dessert, if you serve a whole apple each, so I would suggest pairing this with a light meal, perhaps soup like we did.

I love how very simple this is: the flavors go so very well together, and most likely you already have everything you need in your fridge, that is if you have some apples and cream cheese on hand. Next time I might also flavor the cream cheese with a touch of bourbon for good measure, can never go wrong with that, right!
